fermented honey recipes

I extracted some combs I had stored for a long time as for feeding emergencies and some of the bottles fermented.

I posted this on BS to get some advise how to prevent this but was convinced it is a specialty.

So I used the honey to make two kinds of batches:
one with ginger, garlic, rosemary,salve and chili
one with walnut and peppermint

This is wonderful.

I use fermented honey to make flapjacks (in place of Golden Syrup - Tate & Lyles in UK, King in US). Works really well for ginger flapjack (add chunks of crystallised ginger to the mix).
