First attempt at mead making

Last week I took my first shot making mead using wild yeasts.

Well it started as mead, but turned into Melomel with Black Raspberries. So far, about 10 days in, it tastes great! Although this process is not complete, I had to sample it.
Now time to age, and the hard part, waiting!

I bottled (and have almost drank) a three year old ivy honey mead.. Tasted rotten in year one but it is so smooth and the flavour is complex now. Patience is key so hang in there!

I have been hearing that, as far as say 6 months in certain ones have been horrible, and others are great, and vice versa like you said.

Sometimes the time is the variable. Very interesting...

Yes sir! I was getting on here to do that.
My first 1 gallon batch, bubbling away like crazy this morning.

Waiting is good. But, if it tastes good now there is nothing wrong with drinking some now.
