How Much Honey in the desert?

You have just gotten your bees, either in the mail or you have gone and picked them up in person. Now what do you do? Covers from installation in your hive until the end of the first winter and the first blooms of spring.

HOW MUCH honey in the desert?

I know beekeeping is local and varies, but please share your ideas and rationale on how much honey to leave your bees for the winter.
I'm in the Central Arizona high desert, 86335, and my feral bees are happy and making amazing honey. I want some, but am committed to letting them take care of themselves. Therefore, no food, no treatments at all.
(I do provide a couple of bird baths for water, and some shade, but that's all.)
