HOW MUCH honey in the desert?

I know beekeeping is local and varies, but please share your ideas and rationale on how much honey to leave your bees for the winter.
I'm in the Central Arizona high desert, 86335, and my feral bees are making amazing honey. I want some, but am committed to letting them take care of themselves. Therefore, no food, no treatments at all.
(I do provide a couple of bird baths for water, and some shade, but that's all.)

Thanks for posting.... it's still pretty quiet around here for now, it's not surprising as the forum is still very young, but we have a steady stream of users joining daily, so it won't take long before it busies up around here :-)
